A neighbor of ours bought this to our July 4th picnic. From listening to her, it's a recipe she grew up eating in Texas. Go Lone Star state if it is. I don't know if this is an original Texas recipe. But, Damn it's good. If a Hillbilly could like it, everyone here should enjoy it.

Corn Bread Salad

Mexican cornbread mix - 2 packets
Red beans - 1 can (drained and washed)
Whole kernal corn - 2 cans (drained)
Green onions - 2 bunches (coarsely chopped)
Bacon - 2, 1 pound packages (fried to crispy and chopped into tiny bits)
Fresh tomatoes or Whole peeled tomatoes - 1 can (drained and diced)
Lettuce - enough to make a layer, or to your taste.
Ranch dressing - 1 bottle
Sour cream - 8 ounce tub
Sharp cheddar cheese - 2 cups (shredded)

After ingrediants are properly prepared (cornbread cooked, mators drained, etc.) In a big dish you can start layering as you please using all the ingrediants. The final topping should be lite layer of sour cream, sprinkled with cheese and bacon bits, (mainly for the looks.) Keep refrigerated and serve cold.

If you intend to have this leftover. Make sure you reduce the lettuce content. We discovered it rapidly turns brown even refrigerated in this recipe.

Went to a buddies house last night to play games and his wife made some hour-d-vour's or horse doovers however you spell it. Anyway the one I was MUNCHING DOWN was waterchestnuts wrapped in bacon and then had this sauce poured over it. THe sauce was made with Worshteshershireshooshyshaus sauce mixed with ketchup and brown sugar, sounds wierd but tasted GOOD! Dunno proportions tho Confused GOOD STUFF THO then they baked it in the oven.
