You might also want to try using coarse-ground mustard instead of ketchup.

I'd give you my meatloaf recipe, but I just kinda make it up as I go along...

My grandmother's recipie:

2 lbs lean ground beef
1/2 onion
1 egg
3 slices bread - dried
1 teaspoon salt
1 teaspoon black pepper
1 pinch of finely ground sage
1/2 cup ketchup
(optional - 1 teaspoon worshishire (spelling?) to the mix)

Take bread, onion, egg, worshishire, pepper, salt, pepper and blend (in a blender).

Add mix to ground beef in large mixing bowl. Mix well.

Add ketchup to ground beef. Mix well. (I've been told it's important not to add the ketchup until this point. I have no earthly idea why.)

Put meatloaf mix into a meatloaf pan (go figure). Cover lightly with ketchup.

Bake @ 350 degrees for 1 hour 15 min.

Eat.

My wifes recipe is super similar to the others posted so I'll leave her regular meatloaf out but I almost forgot she makes 2 other twists on meatloaf I love, and you might find more interest with Pedi on these:

1. PIZZA MEATLOAF

-2 eggs, lightly beaten
-1 can (8 ounces) pizza sauce, divided
-1 cup saltine crumbs
-1/2 cup grated Parmesan cheese
-1/2 cup mozzarella cheese, divided
-1/2 cup chopped onion
-1/4 cup chopped green pepper
-1 teaspoon seasoned salt
-1 teaspoon dried oregano
-1/4 teaspoon pepper
-2 pounds ground beef

-Additional pizza sauce, warmed, optional

In bowl, comibne eggs, 3/4 cup of pizza sauce, crumbs, Parmesan cheese, 1/4 cup of mozzarrella, onion, greenpepper, salt, oregano and pepper. Pat into a greased 8-in square baking dish. Bake at 350 degrees for 50 minutes. Drain. Spread remaining pizza sauce over loaf; bake 10 minutes more; sprinkle with remaining mozzerrella; return to the oven for 3-4 minutes or until cheese melts. Yields: 8-10 Servings. Since you like spicy food like me you can also add some crushed red pepper as well as a bit of tobasco sauce for added spice.

I have to run now but will post the sweet and sour meatloaf recipe later!
