OK, growing up, I was raised by two parents who were totally burned-out on meatloaf from having it all the time as kids. As a result, I've had homemade meatloaf fewer than 10 times in my life. My wife is iffy on meatloaf herself, but I think with the right recipe and the right puppy dog eyes, I think I could get me some ... meatloaf.

What I'm missing, though, are recipes that don't taste like just a hunk of ground beef with Heinz ketchup poured on top.

Anyone got any truly good meatloaf recipes out there? For the record, I'm a strong flavor, spicy food, eats-anything-but-eggplant-and-almonds sort of eater, although by no means do I think meatloaf needs to be spicy or anything. Just establishing the parameters.

Your help in this matter is gratefully accepted.

After hearing your criteria i did a little searching, and this popped up. it sounds good to me, and it meets the spicy criteria.

Spicy Sage Meat Loaf
Recipe By :Chef James
Serving Size : 8

Amount Measure Ingredient
-------- ------------ --------------------------------
2 Pounds Ground beef
1 Small Onion -- grated
1 Cup Chunky Applesauce
1 Cup Quick Cooking Rolled Oats
2 Whole Eggs
1/2 Teaspoon Sage -- rubbed
1/4 Teaspoon Pepper
1 Teaspoon Salt

1 Tablespoon Pickapeppa Sauce


Mix ground beef with onion, applesauce, rolled oats, eggs, sage, pepper and salt until well blended, but do not over mix. (Too much mixing makes a tough meatloaf)

Shape into a loaf, or use a loaf pan to form loaf (9"X5"X3") and unmold into a shallow baking pan.

Using a butter-knife, score a criss-cross pattern on top of loaf and brush on Pickapeppa Sauce.

Bake at 350 degrees for 1 1/4 to 1 1/2 hours.

Serving Ideas : Serve with garlic mashed potatoes

Sorry Whiz - whenever I make meatloaf I just wing it.

There are some key ingredients though:
Meat - Ground BEEF - No turkey burger or tofu stuff
Onions - Minced
Garlic - MUST have garlic
BreadCrumbs - Ground fine
Eggs - This is the binder
Salt, Pepper, Other spices --- I don't track the spices but sometimes use peppers
Peppersauce - optional for spicy
Celery - optional for non-spicy, want a different taste kinda night.

Can of Tomato Sauce - NOT ketchup -- Make a slit in the top about 1/4 of the way through the meat. Then pour the can into the slit and make sure there is enough to cover a portion of the top.


My problem when cooking is I don't measure and I don't write down what I use. I mix and match and have made some delicious sauces that I have trouble reproducing.

I will see if my wife has a recipe - I know she made it once with applesauce. Its a different taste.

hey whiz i dont really like meatloaf too much. can we have a walker party where we all eat carnival food like fried dough and cotton candy? that would be awesome.

No offense Dae, but I think you were smoking some of your kindherbs when you thought that recipe looked good. Applesauce and rolled oats? in meatloaf? You must have some potent stuff Wink

Don't know the recipe exactly but I remember my mother used to always use one pound of ground burger with one pound of ground sausage instead of 2 pounds of ground burger.

When I make meatloaf it usually ends up like Zigon's. I just throw stuff together.

for a new spin, you can try putting a brown sugar / ketchup / mustard glaze on top or when you put the raw meatloaf in the pan, put half of it in there and then put some cheese on it and then spread the rest of the meatloaf on top. That way you have a cheesy filling!

Personally I always say, "Don't let your meatloaf." But that's just me.

But I prefer crushed saltine crackers to bread crumbs in meatloaf, gives some added flavor to me.

This is my meatloaf..


1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs


1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
2 Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
3 In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
4 Bake in preheated oven for 1 hour or until juices are clear.


My family however, makes Italian meatloaf.. get a recipe for a meatballs.. make a loaf instead of balls.. and instead of meat loaf sauce.. use pasta gravy. SUPER YUMMY!

I highly recommend substituting oatmeal instead of bread crumbs. Mmmmmmmm, there is nothing like good meatloaf. When I get home from work I'll look up my wifes exact meatloaf recipe, its really good if you don't mind a strong onion flavor and 2 days worth of heartburn.
